When I was first discovering Scotch whisky, my guide to the magical elixir gave me a tasting tip. “With Scotch,” she said, “you need 3 sips to really get the full flavor. Don’t judge it until after the third sip.” So far, I have found her to be exactly right. And it turns out that it’s true for Scotch cocktails too.
The Penicillin cocktail packs a ton of flavor. Blended Scotch whisky serves as the base, with a smaller amount of super-peaty Laphraoig adding a generous amount of smokiness. But this is balanced out with muddled fresh ginger, lemon juice, and honey syrup, resulting in a cocktail that even non-Scotch lovers can enjoy. I especially like eating the bits of muddled ginger left in the glass.
When I ordered this at The Last Word recently, my opening sip was so peaty that I wondered if Giancarlo’s hand had slipped when pouring. But true to Scotch form, by the third sip the lemon and ginger had come out from hiding, resulting in a perfect cocktail for a cool fall evening.
